Pork is a misunderstood meat. While conventional pork may indeed pose health risks (toxins tend to accumulate in fat), pasture raised pork fed organic grain is very healthy. It is also an incredibly versatile meat offering many, many traditional sausages, hams, roasts, and chops. Pigs also play a crucial role in maintaining the diversity found on a healthy farm. They are pastured on the edge of the woods, keeping the forest at bay. They are nature’s rototillers and can work up compost or areas for seeding. In the 1500’s in England many land barons required that their small holders running dairies keep pigs as well. The skim milk and whey were fed to the pigs as a way to keep fertility on the farm. Our pigs are fed excess fresh milk from our dairy herd and scraps from our garden along with supplemental organic and local grains. They get to root around in the ground and go Hog Wild.
